Make it easy to say yes
Office potlucks fail when the ask is vague. Put the date, time and room in the title, then give people a menu that is easy to join. For 30 people, a workable list has four mains, six sides, three salads, four desserts, drinks and supplies. Mark a few lines "store-bought is fine" so nobody who works late feels they cannot take part.
Offices have rules that homes do not: a microwave that tastes of popcorn, one outlet for a slow cooker, no sink in the break room. Add a question that asks what the dish needs, whether that is the fridge, the microwave or an outlet. Ask about ingredients as well, because allergies are the one thing worth a few extra seconds on a sign-up. Close sign-ups two working days ahead, then post the finished list in the team channel. If your team is spread across floors or offices, add a setup and a cleanup slot so the work is shared too.

Quick answers
Can I limit how many dishes of each type we get?
Yes. Each line has a number wanted. When a line is full, it shows as taken, and you can turn on a waitlist for popular dishes.
Can coworkers see who signed up for what?
By default they can see names as first name and last initial. If you would rather keep it quiet, switch on hide names and the sheet shows only how many spots are filled.
